Pineapple Mojito

Pineapple Mojito

Spring is quickly giving way to summer around here with temperatures moving into 80's.  Still not oppressively hot, though.  Perfect for beach days and picnics, street festivals and afternoons in the park.  And, of course, tall cool drinks on the porch.

Classic mojitos are perfect summer sippers with their sweetened rum, lime juice and plenty of fresh mint.  Filled with ice and topped off with club soda, they just beg for putting your feet up and saying aahh.  But, great as they are, they can be even more fabulous with fruit.  I was tempted by some ripe mangoes at the market but then I caught a whiff of a fresh pineapple and knew it was coming home with me.  And going straight into this drink.  Cheers!

Pineapple Mojito
Per Serving:
2 oz. Rum
2 oz. Pineapple juice
1/2 oz. Triple sec
1/2 oz. Lime juice
Handful of fresh mint
2 oz. Club soda

Add the rum, pineapple juice, triple sec, lime juice and mint to a cocktail glass.  Muddle the mint with a muddler or the back of a wooden spoon.  Add ice and top with club soda.  Garnish with a wedge of fresh pineapple, if desired.
