Icy Cold Watermelon Martini

So, remember a few weeks ago when I was in such a hurry for summer to arrive?  Yeah...um...OK.  We can check that off the list now because it's arrived and with a vengeance.  No, I'm not wishing it away.  Not at all.  But I am wishing for something tall and icy cold to drink.

Summer, watermelon, vodka...those all go together, right?  But instead of filling a watermelon with the vodka, I just threw it all in a blender, poured it into a tall glass and sat back, relaxing.  Aahh.  Cheers!

Per Serving:
1 Cup cubed seedless watermelon chunks
2 oz. Vodka
1 oz. Lime juice
1 oz. Simple syrup
1/2 oz. Melon liqueur
Pinch of sea salt (trust me!)

Add all the ingredients to a blender and puree until smooth.  Fill with ice and blitz until completely smooth again and all the ice crystals have broken up.  Pour into a chilled glass and freeze for another few minutes so that it will thicken a bit.  Garnish with a wedge of watermelon, if desired.

  2. Always salt with watermelon! YUM! luckily I have watermelon in the fridge - I don't have to go pick up apricots off the trees for this wonderful drink! nothing like a hot Sunday Afternoon cocktail!
