Chocolate Chip Cookie Martini

If you've been reading Hungry Couple this week then you know it's Cookie Week! I've made Dark and Crunchy Peanut Butter Cookies and Maple Walnut Shortbread Cookies, there's an awesome giveaway and I also have an extra chance to win cookies from the Girl in the Little Red Kitchen Bakeshop. But today is cocktail day and....well...I had to do it!

I tried to think of the quintessential cookie flavor and I kept coming back to chocolate chip.  OK, chocolate chip cookie cocktail it is but, how? I was munching on one of those bags of 100 calorie mini cookies (just to get inspired, of course) and none of the liqueur combinations I was trying were quite right.

So I just threw a few of the cookies into my mini food processor with the vodka to see what would happen. I didn't know if they would break down completely into a liquid but they did. A few more ingredients to balance the flavors along with a rocking rim treatment and I had a winner. Cheers!

Per Serving:
1 1/2 oz. Vanilla vodka
2 oz. Vanilla ice cream
2 oz. Milk
1/2 oz. Chocolate liqueur
10 Chocolate chips, divided
1/4 oz. Buttershots liqueur
6 Mini chocolate chips cookies (or equivalent), divided

To rim the glass, chop half the chocolate chips and 2 of the cookies finely.  Dip the rim of the glass in some milk or a bit of ice cream and roll it around in the mixture.  Refrigerate for a few minutes to set.

To make the cocktail, add the remaining 4 cookies to a mini food processor or blender along with the vodka, ice cream, milk, chocolate liqueur, buttershots liqueur and the other half of the chocolate chips. Blend until smooth and pour into the prepared glass.

  2. That is, indeed, a rocking rim treatment! I almost pinned this under Desserts. I think it could go either way.
