The Rummy Pumpkin

The Rummy Pumpkin

Thanksgiving is one week away and I'm sure you've got your dinner menus planned. But what about your cocktail menu? Oh, were you just planning on putting out bottles of wine and some soft drinks? No thought of creating a house special cocktail? That's about to change!

The Rummy Pumpkin
This drink was born through lots of experimentation. More of this liqueur, less of that, stronger, milder...I think we spent several (happy) weeks on it. The final result is a masterpiece, if I do say so myself. Want to know the measure of cocktail success? Two non-drinking mothers finishing a glass each. One of them a second. The rest of our guests, who love a good cocktail, lost count.

The first year we served it as our house special Thanksgiving cocktail, we made each individually and it was totally unworkable.  The second year, we prepared a pitcher in advance.  But still had to make a second pitcher during the evening. The third year, we had two pitchers pre-made in the fridge. And had to make a third. We may need a keg... Cheers!

Per Serving:
2 oz. Rum
2 oz. Vanilla ice cream
1 1/2 oz. Unsweetened pumpkin puree
2 Teaspoons Simple syrup
1/2 oz. Chocolate liqueur
Pinch of salt
Pinch of cinnamon

Combine all the ingredients in a cocktail shaker.  Fill with ice and shake well until the ice cream dissolves. Then pour into a chilled cocktail glass and garnish with a bit more cinnamon.
